Buffalo Blu Sauce

Ingredients

  • 3 Tbs. All-purpose flour

  • 2 C. Whole milk

  • 3 Oz. Of an ultra creamy blue cheese (like Gorgonzola Dolce or Baffalo Blu)

  • Several dashes of your favorite hot sauce (We love Cholula Green Pepper!)

  • 1/2 Tsp. Kosher salt

  • 1/4 Tsp. Black Pepper

Instructions

  • On medium low heat, melt 2 tablespoons of butter in a saucepan, then add flour.

  • Whisk vigorously until butter and flour are well blended (1 to 2 minutes). The mixture will take on a fragrant nutty smell.

  • Add the milk while whisking to ensure there are no clumps. Let it simmer for about 10 to 15 minutes, whisking occasionally until it starts to thicken. (The consistency should be like a bisque.)

  • Once thickened, turn the heat off and add the cheese (break the cheese down into smaller, bite sized pieces so it will melt quickly). Whisk until the cheese is incorporated and fully melted.

  • Add the hot sauce, salt and pepper. Whisk to combine and taste. Adjust seasonings accordingly.

  • Sauce should be glossy and smooth.

  • Serve hot drizzled on the vessel of your choice!

Yields about 2 cups of sauce.
