Baked Stuffed Shrimp
This meal is simple to make and incredibly buttery and delicious! Inspired from a traditional New England crabmeat stuffing recipe, we’re giving it a unique twist by using Italian Piave and Dot’s Crumbles in place of Ritz crackers!
Ingredients
12 Jumbo Shrimp (16-20 count), deveined, peeled, butterflied
1/2 Stick salted butter
2 Tsp. Garlic, minced
2 Celery stalks, minced
1/2 Lb. Crabmeat
2 Tbs. Lemon juice
1-2 Tsp. Hot sauce (optional)
1/3 C. Dot’s Crumbles
1/4 C. Fresh parsley, chopped
2 Tbs. Italian Piave, grated
Instructions
Preheat oven to 350 degrees
Melt butter in a medium saucepan; then add minced garlic and celery and saute until soft
Add crabmeat and lemon juice and cook 1-2 minutes while stirring lightly
Combine Dot’s Crumbles, parsley, and grated Piave in a bowl
Fold in ingredients from the saucepan (and optionally add hot sauce at this time); the mixture should stick together and be moldable
Place butterflied shrimp on a lined/greased baking sheet
Add a large scoop of stuffing on top of each shrimp
Bake for 10-12 minutes and serve immediately with some cracked pepper and extra lemon juice
A cold New England style IPA and loaded baked potato skin will pair harmoniously with this dish!
