Blue Cheese Fondue

Want to dress your ribeye or NY strip in a luxurious sauce? This Blue Cheese Fondue Recipe, which is an adaptation of Melissa D'Arabian's Blue Cheese Fondue, is the answer. 

Ingredients

  • 2 Tbs. Salted butter

  • 2 Tbs. All purpose flour

  • 1 1/4 C. Whole milk, warm

  • 2 Oz. Crumbly blue cheese (we like Point Reyes Original), crumbled

  • 2 Oz. Cream cheese, room temp

  • Salt and pepper to taste

Instructions

  • Melt the butter on Medium-low in a saucepan.

  • Add the flour and cook, stirring constantly, about 1 minute .

  • Add the warm milk and continue to stir until the sauce thickens; then bring to a boil.

  • Sprinkle with salt and pepper. Lower the heat and cook while stirring for another 2-3 minutes.

  • Add cream cheese in little chunks and let it fully melt into the sauce. Then add half of your blue crumbles. 

  • Continue to whisk until the crumbles are completely melted. 

  • Season with additional salt and pepper if needed.

  • Off heat, add the remaining crumbles and serve immediately. (You can also keep the fondue warm by using a tapas-size fondue pot.)
