Caveman Blue Cheese Sauce
This buttery, blue cheesy sauce is going to quickly become a steak dinner staple that you simply can’t live without. It’s made with Rogue Creamery’s Caveman Blue, which has earthy notes of shiitake mushroom, sweet golden beets, brown butter, and a moderate “blue” flavor. Silky, creamy, and indulgent, our Caveman Blue Cheese Sauce is fit for the finest ribeye or NY strip!
Ingredients
1/4 LB. Caveman Blue, crumbled
2 Tbs. High Lawn Farm Salted Butter
1/3 C. Sweet onion, chopped
1/3 C. Heavy cream
1 Tbs. Worcestershire sauce
1 Tbs. Mayonnaise
Salt and pepper, to taste
Instructions
Melt butter in a small saucepan over low heat
Add chopped onion and sauté until golden brown (about 7 minutes)
Pour in heavy cream and gently stir for 30 seconds; then add Worcestershire Sauce, mayonnaise, salt, and pepper and let the mixture bubble
Add the crumbled Caveman Blue and allow it to melt into the cream/onion mixture
Remove from heat and allow sauce to thicken for several minutes
Pour thickened sauce into ramekins and serve alongside your favorite cut of beef!
For our steak dinner we grilled a ribeye (medium rare). Our sides included oven-roasted asparagus (with EVOO, lemon juice, salt, and pepper) and toasted baguette chunks topped with Olive Bruschetta. My husband and I both agree: this was the BEST steak dinner we have ever consumed. We hope you enjoy it as much as we did!
