Summer Burrata Plate With Jamón Serrano, Mint, & Peas
Looking for a quick and simple summertime meal option? This recipe is for you! It only involves 7 ingredients and the most involved part of the process will be boiling some peas … like I said, this one is simple!
Ingredients
1/3 C. Frozen peas
1/4 C. Chopped, fresh mint (packed)
2 TSP. Fresh lemon juice
3 TBS. Extra-virgin olive oil, plus more to serve
1/4 C. Grated Italian Piave, plus more to serve
Kosher salt and fresh ground pepper
8 Slices of Spanish Jamón Serrano
2 4oz. Burrata Balls
Instructions
Boil water in a small pot; add a 1/2 teaspoon of salt and cook peas until tender
Drain and rinse cooked peas under cold water; then pat dry
In a small bowl, toss the peas with mint, lemon juice, olive oil and 1/4 cup of Italian Piave. Season the mixture with salt and pepper.
Place 4 slices of the Spanish Jamón Serrano on each plate and top with a burrata ball
Spoon the pea mixture over each burrata ball
Sprinkle with remaining Italian Piave and drizzle with more olive oil
Serve with a couple slices of crusty white bread
You’ll be amazed at how truly filling this meal is! If you’re serving it as an appetizer, I’d recommend using half of the burrata per plate. Enjoy!
